So I’ve been training for my first ever half marathon. And slllooowwwwwllllyyyy (very slowly) my mileage has been increasing. I always do my long run on the weekends because it means I have time to come home, relax, shower, and most importantly, make breakfast.
Recovery is such an important part of working out. Improper recovery can lead to getting injured, not maximizing results, and just feeling really bad after a tough workout. Part of recovery is making sure to eat something and refuel your body. Plus an awesome breakfast gives me something to fantasize about while I run!
This breakfast bowl was actually something I ordered at a restaurant, but it was super easy to recreate. The eggs have protein, carbs from the potatoes, and healthy fat and salt from the olives. The goats milk cheese and pesto are just a bonus. It makes a great recovery meal! I mean I know I should probably sub sweet potatoes for the golden ones…but ya’ll I HATE sweet potatoes. Can’t stand them. Besides I think after running 8 or 9 or 10 miles, I deserve to eat my less healthy potatoes.
I normally start the potatoes and while they are baking take time to stretch, hydrate, and shower. By the time all of that is done, the potatoes are ready. Then it just takes a few minutes to scramble the eggs and throw on the toppings. Wallah! Delicious breakfast!
I don’t really have an official recipe for this, because I just make one serving for myself. However, its super easy to make as much or as little as you want! Just adjust how many potatoes and eggs you use to your liking.
Instructions:
- Chop potatoes into quarters (I used baby golden potatoes)
- Throw into a bowl and drizzle with olive oil
- Stir/toss potatoes to make sure they are evenly coated
- Add seasoning of choice (Trader Joe’s seasoning is amazing)
- Mix again
- Spread potatoes evenly on an aluminum foil lined baking sheet
- Bake for 25min at 400F
The eggs you can cook however you like. Add to the finished potatoes in a bowl and throw on toppings to taste!!
Super easy and you can change the topping up to make it different every time. For example, Eric requested when he gets home I make the same thing, but instead of pesto and olives, I use cheddar cheese and bacon. Yeah…hes super healthy that way.
