I love weekend mornings. Especially in the fall. The light is so pretty, the air just cold enough to make things cozy, and it even smells good! Weekends are the only time that I get to take things slow and not have a million things I have to get done. I savor my weekend mornings. I go for my long run. Take a long hot shower. Lie on the couch with my puppy watching Gilmore Girls while icing my legs. But the best thing about weekends, well that would be pancakes.
This past weekend, I decided to try and incorporate my favorite seasonal flavors into my favorite food. I was aiming for spiced apple pancakes. Because I was lacking several dry ingredients and had no motivation to go to the grocery store, I just used Bisquick mix for my pancake batter. I add shredded apple, nutmeg, cinnamon, and vanilla. It definitely made the house smell like fall!
I don’t know what it is, but my first two pancakes always turn out super ugly. I just used these as my taste test pancakes. The flavors were good, but it definitely needed something sweet that would compliment and bring more fullness to the hint of apple. Cinnamon and honey always go well with apples, and butter on pancakes is always a must,so cinnamon-honey butter seemed like a great idea. I just combined a softened stick of butter, powdered sugar, honey, and cinnamon in a bowl and whipped together until done. The pancakes, with the warm butter melting and drizzled with maple syrup, were amazing. Even Eric liked them which is how I knew they weren’t overly sweet. And they tasted just like fall! Not a bad way to start a Sunday morning.
Apple Pancake Recipe
- Bisquick pancake mix
- 2 Eggs
- 1 cup Milk
- 2 large apples (whatever kind you want, I used granny smith)
- Cinnamon
- Nutmeg
- Vanilla
Add eggs and milk to pancake mix and whisk together. Add cinnamon, nutmeg, and vanilla to taste. I found these flavors rely heavily on personal preference, as some people don’t like as much fall spiciness. Grate apples using a grater or food processor. Whisk into batter. Spray a pan with coconut oil cooking spray and let pan heat up. Add batter to pan using slightly less that 1/4 cup. Allow pancakes to cook on low heat until brown, then flip (about 1-2min).
Tip: to keep pancakes warm place in oven at 200 degrees or less.
Cinnamon-honey butter recipe
- 1/2 c powdered sugar
- 1/2 c honey
- 1 stick of butter
- cinnamon
Make sure buttered is soften. Add all ingredients to bow (cinnamon to taste) and mix together using an electric mixer. Butter can be left out or kept in fridge, just like regular butter.
Spread butter on piping hot pancakes and top with lots of maple syrup. Eat, and try to stave off the sugar coma. Its okay if you can’t, just find a comfy couch with a fluffy blanket, and take a nap with your puppy. I know that’s what I’ll be doing.
