Healthy Vegan Mac and Cheese

I’ve been a vegetarian all my life but just recently cut out dairy. I learned about all the horrors that occur in the dairy industry and just couldn’t bring myself to eat it anymore. Some people seem to go vegan so effortlessly. Like they just cut everything out no problem and forget about cheese and never look back. But I’m going to be honest- I LOVEDĀ  cheese. I really really miss cheese.

I’ve tried so many vegan cheeses and just been disappointed. I’ve tried nutritional yeast which doesn’t taste like cheese at all (and actually isn’t that good for you). I kind of lost hope that I would ever be able to find a good vegan cheese and be able to enjoy things like pizza and mac n cheese.

Then. One fateful day. At Whole Foods (which I never go to because you buy like 2 things and its $80. Trader Joes all day every day). I found it. The most amazing vegan cheddar. Its by So Delicious and it is- so. delicious. Even my husband agreed that it tasted nearly identical to cheese in both texture and flavor. I knew I had to use it to make mac n cheese.


Recipe:

1/2 c cashews (soaked overnight)

1 medium carrot peeled and roasted

1/4 c almond milk

1/4 c water

1 tsp salt

2 tsp vegan butter (I much prefer Myokos to Earth Balance)

1/4 c So Delicious Cheddar Shreds

Blend all ingredients except cheese shreds in a blender until smooth (its a small amount so I would use a smaller blender like a Nutribullet)

Pour sauce into small pot and cook over medium-low heat until warm. Stir in cheese shreds until fully melted.

Pour over pasta!

I tasted the sauce before I put the shreds in and it was extremely delicious that way too! It tastes less like traditional mac n cheese but is really good in its own way so if you can’t find the cheese shreds it will still taste yummy!


So okay technically its not mac n cheese, cause I used spaghetti instead of macaroni, but it was still delicious and satisfied my cheese craving.
