Zucchini Bread

A few months ago one of my co-workers brought in zucchini bread that his roommate’s girlfriend had made. Zucchini seemed like a really weird thing to put in bread, but it was amazing! Sweet and delicious and not dry at all. I wanted to try making it for myself, so I procured the recipe and a GIANT zucchini (seriously I had no idea zucchini even got that big) from my co-worker, took advantage of a day off, and got to work.

The recipe was actually really easy and came together quickly. The girl I got the recipe from told me that sometimes the top center area comes out doughy sometimes but the rest of the bread would be good to go. With this in mind I poured the batter into my greased bread pan and put it in the oven for the allotted 45 min at 325 degrees. I forgot something though, I was baking at altitude. With altitude you generally have to bake things longer and at 25 degrees hotter.

After 45 min when I pulled the bread out and it was not anywhere close to done. At first I thought this was just what the recipe had told me about. Then I realized I had forgotten to increase the temperature. I turned the oven up and put the bread back in for another 30 min. The next time I pulled the bread out, it was done (except for that middle top part). The recipe suggested just cutting this part out because continuing to bake it could dry out the rest of the bread.

The bread came out delicious (although not super photogenic). I took most of it to work otherwise I would have eaten the whole thing!

Zucchini Bread Recipe

  • 2 cups zucchini
  • 3 eggs
  • 3 c all purpose flour
  • 1 c vegetable oil
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp cinnamon
  • 2 1/4 c sugar
  • 1 tsp salt
  • 3 tsp vanilla extract

Preheat oven to 325 degrees (350-400 if you’re at altitude).

  1. Grate zucchini and set aside. I just used my food processor, because its way faster than doing it by hand.
  2. Mix sugar, vanilla, oil, eggs with electric mixer until creamy.
  3. Add flour, salt, cinnamon, baking soda and powder to mixture. Use electric mixer until almost combined then add zucchini.
  4. Finish combining ingredients.
  5. Pour batter into bread pan until its 2/3 full.
  6. Bake for 45-55 min.
