It been warm here in Colorado. Like 57 degrees in January! All the warm weather has definitely had me craving summertime flavors. I wanted something refreshing, but that was still healthy.
Originally,I was going to make a watermelon, basil, and lime juice. But…I completely forgot to get limes and basil at the grocery store. I was stuck using what I had at home already. I had watermelons and lemons, which go pretty great together, so I decided to see what happened.
I threw the watermelon in my magic bullet and started blending. I was surprised to find I actually had to add a little extra water to help it blend. Once the watermelon was blended I added juice from a lemon, stevia, and ice. The result was a cold, refreshing, slightly slushie drink. Perfect for bringing summer into winter or hydrating on hot summer day! And also super easy and healthy.
Recipe:
2 cups of watermelon
Juice from 1 lemon
2 tsp of stevia
Ice as desired
Blend watermelon until smooth. Add lemon, stevia, and ice and blend until all combined.
